Living in the Pacific Northwest, I am spoiled. Salmon is almost considered a staple food here. We're encouraged to eat it because it has many health benefits; quite honestly, I would eat it regardless. But let's find out a bit more about this fabulous fish. Also this week, as April comes to an end, it's time to look ahead to what May brings. The first thing that comes to mind is Cinco de Mayo, a perfect excuse for taco night!

Why You Should Eat Salmon

Cinco de Mayo Light
Mexican-style fare is a weekly staple in our house. My kids love quesadillas or tacos. Cinco de Mayo gives us just another great excuse to indulge in some Mexican-inspired recipes. These recipes are lower in fat than their regular Mexican counterparts.
