You can call them fungi or toadstools, puffballs or morels. They can be toxic, antibiotic, psychoactive, wild, cultivated, poisonous or edible (and often delicious). There are thousands of species of mushrooms. We'll focus on the edible ones for now and some of the incredible things you can do with them, gastronomically speaking.

Ginger-Marinated Grilled Portobellos
Portobello mushrooms have a flavor, texture and size that make them perfect for a variety of cooking methods from sautéing and roasting to grilling and preparing in ways you might not typically associate with mushrooms. This low-fat Eastern European dish can be made with portobellos or pretty much any mushroom with a large cap and can be served on a bun or paired with a meat dish.

Many Ways to Stuff a Mushroom
There's nothing like taking a flavorful favorite and fashioning it into a stuffing. The sky (or at least your imagination) is the limit when it comes to creating such tasty morsels with mushrooms. This particular list includes mushrooms stuffed with crab, ham, cheese, bacon, sausage and more.

Vegan Mushroom Risotto
With no butter or cheese, this risotto dish nonetheless comes out creamy and makes for an excellent comfort food as we move from summer to fall. You can add broccoli, leeks or other veggies and any number of herbs and spices to suit your taste and really make this dish your own.

Watch Out for the Wild Ones
According to our Home Cooking guide in this must-read, there are more than 38,000 kinds of mushrooms in the world. In fact, she writes, "some are so rare that they only grow for one week during the year." So if you're out picking wild mushrooms, make sure you know what you're looking for and especially which ones you can eat.
