Winter may have passed, although snow is still on the ground in some places, but it doesn't mean you have to put your soup pot away. Make good use of fresh spring produce to make some fabulous soups for a healthy and delicious lunch or light supper.

Fresh seasonal produce such as artichokes, asparagus, and fava beans make for light, bright, and delicious soups. And while all those vegetables are green, let's not forget spring beets, carrots, and even lemons to add a splash of color.

Light Dairy-Free Lunches
