March is National Peanut Month, and it only seems fair that we give recognition and gratitude to the mighty legume. From peanut butter and jelly sandwiches to Thai peanut satay, it has been there for us through thick and thin--and we still love a smear of peanut butter on just about anything. Here are dozens of delicious recipes that will remind you where we're nuts for the noble peanut. Did you know that peanut butter was invented by a doctor as a health food?

Going Nuts
The best thing about peanuts is their versatility. With a mild, hearty flavor and a consistency ranging from crunchy to buttery, they're a great addition to virtually any meal. We'll take a bowl of Peanut Soup or a sprinkle of them on a Vietnamese Chicken Salad any day.

Nuts for Noodles
One of the best way to enjoy peanuts is in a slightly spicy sauce topping a heap of noodles. Whether in Thai, Chinese, or Korean cuisine, there's a reason this combination has remained popular.
